Guys, we’re back with Mediterranean deliciousness from Ambrosía Concept Catering! I’ve mentioned before that Ambrosía is a team of Italians based in Barcelona, which makes them culinary experts par excellence for Southern Europe.
Today, we wanted to introduce to you a lesser known Italian specialty: Bresaola ham. Originally from the Valtellina region in Lombardy, it is eaten all over Italy. The air-dried and salted beef product is a popular antipasto (appetizer), often served in very thin layers, “carpaccio” style. I tried it for the first time at the shoot and I have to say it’s heavenly!
Ambrosía also uses bresaola to create little “tulips” filled with caprino mousse and sprinkled with chives… the perfect bite-sized starter before a seated wedding banquet!
In combination with parmesan and rucula, bresaola is just delightful. In Italy it is also used as sandwich meat, together with these two other Italian staples.
The name “bresaola” is protected, by the way, and can only be used for the original Italian version produced in Valtellina.
